Since my accident, cooking had become very difficult for me. My team of carers were cooking for my husband and me, but the consistency and quality of the meals were not good. Plus, my sense of independence and self-worth suffered greatly.
I became a NDIS participant in 2020 and to my delight, I discovered that Lite n’ Easy was available to me through the NDIS. The subsidised meals are very affordable as opposed to having a carer cook for me, and this allows me to better balance my NDIS package budget.
Rather than relying on the cooking and scheduling of my carers, I can now enjoy a lunch I choose to eat, at a time I feel like eating. We can also enjoy well-cooked evening meals that I can heat up myself. I like having dessert available for when I feel like one too, and my favourite is Rice Pudding.
My favourite meals are chicken salads and Steak with Mushroom Sauce. The chicken is always so well-cooked, not dried out at all, and the fresh salad is a bonus. The steak is always cooked perfectly too. I also enjoy the Baked Potato Bolognaise, it's a great snack to have if I am feeling a bit hungry.
It seems strange that just by ordering our meals my life has changed for the better. Small gains in independence are hugely beneficial to my well-being and feeling of self-worth. I feel much happier having done something for myself and my husband. I missed making our dinners, but now I feel useful again.
I believe that getting a bit of independence back has empowered me to go out in the world on my own again. I even took a Resin Art Class, and I loved it. I now have made clocks, tasting boards, and lazy Susan’s and have a micro-business selling them.
I like to order the My Choice meals as they are just the right size for us, and we often like to have soup with dinner or a dessert. The Tomato Soup is very good.
Before Lite n’ Easy our dinners were very limited to what my carers could cook for us. Now we have a huge range to choose from, cuisine from all around the world. My husband enjoys the meals as well.
For those interested in my back story, in 2014 I slipped on a wet floor and sprained my right wrist. A sprain would normally take about 5 days to heal, but mine got worse.
After 3 months I was diagnosed with a rare condition, Complex Regional Pain Syndrome (CRPS). There is no cure, and no single treatment works for all sufferers. My condition can spread to other parts of the body, and it has. I now have no use of my right hand or arm. My right foot, left knee and 50% of my back are now affected too.
So, in the space of just a few years, I have gone from working full-time, running for fun, and being totally independent to having a full-time carer and using a wheelchair for long outings.
